- 2tsp olive oil
- ¼ cup onion
- ½ cup mushrooms
- 1 cup spinach
- 6 eggs
- ¼ cup cheddar cheese
- ¼ tsp salt
- Preheat oven to 200°C.
- Spray 4 ramekins with cooking spray.
- Heat oil in a pan over medium-high heat.
- Chop onion and mushrooms. Sauté onion for 2 minutes. Add mushrooms and cook for another 2 minutes. Add spinach and cook for 1 more minute or until spinach is wilted.
- Whisk eggs in a medium sized bowl. Add onion mixture and cheese. Pour egg mixture into ramekins and bake for 12-14 minutes or until firm in the centre.
