Asparagus Mushroom Salad

 

Ingredients

  • 4 whole asparagus spears
  • 2 cups lettuce
  • ½ cup mushrooms
  • 1 tbsp lemon juice
  • ¼ tomato
  • 2 tbsp fresh coriander
  • 1 orange
  • 2 tsp olive oil
  • ½ tsp black
  • ½ tbsp goat cheese
  • 110g chicken breast
  • 4 Provitas
  •  

Directions:

  1. Grilled chicken to the desired degree of doneness.
  2. Slice mushrooms and drizzle with ½ of the lemon juice. In a large bowl combine asparagus, lettuce, mushrooms, chopped tomato, chopped coriander, and the peeled and chopped orange.
  3. In a small bowl combine remaining ingredients except for goat cheese, whisking to combine.

 In a serving bowl combine asparagus with dressing. Sprinkle with crumbled goat cheese. Top salad with grilled chicken. Enjoy crackers on the side.
