QUINOA & CHICKPEA SALAD WITH CHICKEN

 

Ingredients:

  • 20g dry quinoa
  • 40g tinned chickpeas
  • 40g whole kernel corn
  • ½ sweet red pepper
  • 1 spring onion
  • 1 tbsp parsley
  • ½ lemon
  • 5ml orange juice
  • 1 ½ tsp olive oil
  • Black pepper to taste
  • 115g chicken breast

 

Directions:

  1. Chop pepper, spring onion, and parsley. Mix with chickpeas and corn in a bowl. 
  2. Take lemon and squeeze 1 tsp lemon juice. Whisk together lemon juice, orange juice, olive oil and black pepper. Pour on top of vegetables and toss to combine. While cooking chicken store in freezer or put in refrigerator overnight. 
  3. Cook chicken and quinoa.

 

This recipe is a great to make the night before.
Salad is best served cold over quinoa with grilled chicken, or all mixed together. Enjoy!
