Chicken "Fried" Rice



  • 1 chicken breast
  • 60g broccoli
  • ½  carrots
  • 2 tsp butter
  • 30g brown rice (dry)
  • 1 egg
  • 2 tbsp soy sauce


  1. Preheat a large pan over medium heat. Cook diced chicken breast until cooked through and remove from pan. 
  2. Steam broccoli and carrots until tender. 
  3. Cook brown rice according to package directions. 
  4. Add butter to the pan. Beat egg. When the butter has melted, add the egg and scramble for about 1-2 minutes. Next, add the cooked chicken, vegetables, cooked brown rice, and soy sauce and cook for 2 minutes, or until warmed through.
