CURRIED CHICKEN CHOWDER

 

Ingredients:

  • 1 tsp canola
  • ¼  Onion
  • ½ tsp curry powder
  • 300ml vegetable stock
  • Salt
  • 2 tbsp coriander
  • 5 potatoes
  • ¼  carrots
  • ½  garlic clove
  • ¼  tsp ground cumin
  • ¼  tomato
  • Pepper, Black
  • 1.5 tsp flour
  • 140g cooked chicken
  • ¼ apple

Directions:  

  1. Peel and core apple. Chop coriander, apple, onion, carrot, and tomato. Dice Potato. Mince Garlic. Cut chicken into strips
  2. In a large saucepan, heat oil over medium heat. Add apple, onion, carrot, and garlic and sauté until tender, 5 to 6 minutes.
  3. Add flour, curry, and cumin and cook 2 minutes, stirring constantly. Stir in broth, tomato, and potato and bring to a boil.
  4. Lower the heat and cook, at a gentle simmer, 20 minutes. Add chicken strips and heat 2 to 3 minutes. Season with salt and pepper and sprinkle on coriander before serving.
