Quinoa & Chickpea salad with chicken


  • 20g uncooked quinoa
  • 40g chickpeas
  • 42g corn
  • ½ green pepper
  • 1 spring onion
  • 1 tbsp parsley
  • ½ lemon
  • 5ml orange juice
  • 1 ½ tsp olive oil
  • To taste – black pepper
  • 115g chicken breast



  1. Chop pepper, spring onion, and parsley. Combine all veggies, chickpeas, corn and parsley together in a bowl.
  2. Take lemon and squeeze 1 T lemon juice. Whisk together lemon juice, orange juice, olive oil and black pepper. Pour on top of vegetables and toss to combine. While cooking chicken store in freezer or put in refrigerator overnight.
  3. While salad is cooling, cook chicken and quinoa.
  4. Salad is best served cold over quinoa with grilled chicken.

This recipe is a great to make the night before.
