TERIYAKI GRILLED TOFU WITH STIR FRY VEGETABLES & BROWN RICE

 

Ingredients:

  • 1 tsp fresh ginger
  • 1 garlic clove
  • 180g tofu
  • 4 tbsp low sodium soya sauce
  • 1 tbsp brown sugar
  • 50g uncooked brown rice
  • 1 carrots
  • 105g fresh green beans
  • 1 tsp olive oil

 

Directions:

  1. Grate fresh ginger and mince garlic. Cube tofu and marinate in soy sauce, brown sugar, ginger and garlic for 30 minutes to 1 hour. 
  2. Cook brown rice according to package directions. 
  3. Grate carrots. 
  4. Grill or broil the tofu until heated through. 
  5. Stir-fry brown rice, grated carrots and green beans in olive oil. Serve tofu over stir-fry mixture.
